Chablis!


May 27, 2021 is #chardonnay day and what better way to celebrate then with a bottle of Chablis?!

Wait. What? Chablis? That slightly sweet, white wine from a jug that my aunt used to bring to family picnics!?!

Uh, no!

Nothing against good ‘ole Carlo Rossi but we are talking about the real stuff here; from northern France, the tip of the Burgundy region, just two hours or so southeast of Paris.

Wine pros often use terms like “chiseled”, “steely” and “racy” to describe these crisp, cool-climate white wines which are made from 100% chardonnay!

What is so special about Chablis?
Well, for starters, the soil that makes up its most famous vineyards is a mix of clay and an ancient type of limestone that dates back over 150 years to the Kimmeridgian era. It is largely derived from the decomposition of many species of shellfish which thrived in a tropical sea that once covered this part of the world.

While this body of water receded long ago, the limestone soil left behind is partly responsible for perhaps the purest expression of the Chardonnay grape you’ll find anywhere in the world.

Now, if big, oaky, buttery, California Chardonnay is your thing, that is great, BUT you are not likely to find what you are looking for in the chardonnays of Chablis. With their high acidity and green apple character, Chablis wines are refreshing whites that pair great with fish and shellfish, grilled veggies, chicken or as an aperitif.
